Tasting Notes: Chocolate, Dried Fruit and Orange Blossom
This peaberry coffee is a typica varietal that comes to us from the Sigri Estate located in the Waghi Valley of the Western Highlands Province of Papua New Guinea. The Sigri Estate is certified organic and fair trade certified. The estate is also bird and eco friendly using shade trees as a way to protect the coffee and offering homes to several species of birds. They have been growing coffee for over fifty years and concentrate on Typica varieties that were brought to Papua New Guinea from the Jamaican Blue Mountain Typica root stock. The beans undergo a three day wet process followed by sun drying to lock in the perfectly balanced levels of sweetness and acidity. We roast these beans to a medium level and that profile accentuates the dark sweetness of the chocolate followed by the acidic citrus and dried fruit flavors that make up this cup.
